A Taste of Tunisia

Learn to cook some of the signature dishes of one of the Mediterrranean’s most delicious and varied cuisines – and have a great holiday at the same time

 

If you long to be able to turn out the perfect couscous, with succulent lamb and tender vegetables, or to master the skills needed to make a brik à l'oeuf, the crispy pastry envelope hiding a soft-yolked egg, or to bake that delectable orange and almond cake that's so moreish, then this is the holiday for you.

 

Prompted by clients who've travelled to Tunisia before and enthused about the flavours of traditional Tunisian food, we are delighted to introduce this relaxed cookery week. To head it up, we have chosen the ideal teacher in Jackie Boudina. She is English, married to a Tunisian, has lived in the country more than 30 years and even written a booklet about local dishes.

 

It was in the kitchen of her mother-in-law, Zohra, that Jackie herself first absorbed the secrets of Tunisian cuisine and she is never happier than when sharing her love of the tasty dishes that local families enjoy and keen visitors like to sample. "Tunisian cooking has all the beautiful tastes of the Mediterranean with a hint of Africa about it," she says. There are Ottoman and Berber influences, but essentially the recipes are simple with a marvellous combination of flavours using fresh vegetables, fish, chicken and lamb, virgin olive oil, garlic, herbs and spices.

 

Have no fear that you will spend the entire week slaving over a hot stove! For one thing, these cookery weeks are scheduled for January and February when it's cooler. For another, lessons are interspersed with trips to the markets and to wine producers; there is time built in for sightseeing too, as well as for unwinding and dining in local restaurants or in our first-class resort hotels. Our Taste of Tunisia course will not only extend and invigorate your cookery repertoire but also give you an insight from a different perspective into the country and its way of life.

 

Cookery Week Itinerary

Day 1

(Friday) Depart London, arrive Tunis. Transfer to Port El Kantaoui. Accommodation at Hasdrubal Hotel.

 

Day 2

(Saturday) Morning at leisure. In the afternoon, an introduction to Tunisian cuisine by Jackie Boudina. Dinner and accommodation at Hasdrubal Hotel.

 

Day 3

(Sunday) Depart for Monastir and visit the food market. Proceed to Sousse for a visit to the Sousse Museum, renowned for its collection of Roman mosaics, followed by a gentle stroll through the Medina towards the town centre for a Tunisian lunch at La Marmite restaurant. Afternoon at leisure. Dinner and accommodation at Hasdrubal Hotel.

 

Day 4

(Monday) Cookery session at the Institut Supérieur Professionnel de Tourisme, preparing dishes you will enjoy for lunch. Dinner and accommodation at Hasdrubal Hotel.

 

Day 5

(Tuesday) Depart to Grombalia for a visit to Domaine Neferis vineyard, followed by a couscous lunch. Dinner and accommodation at Hasdrubal Hotel.

 

Day 6

(Wednesday) Cookery session at the Institut Supérieur Professionnel de Tourisme. Lunch menu of dishes prepared during the class. Dinner and accommodation at Hasdrubal Hotel.

 

Day 7

(Thursday) Cookery session at the Institut Supérieur Professionnel de Tourisme. Lunch on the fruits of your labours. Gala dinner at Le Méditerranée Restaurant in Port El Kantaoui. Accommodation at Hasdrubal Hotel.

 

Day 8

(Friday) Transfer to Tunis airport.

Operation

Please note that a minimum of six participants in the cookery lessons is required for us to be able to operate this holiday. Maximum ten. Should it be necessary for us to cancel the trip, you will either be offered the option of an alternative date or a full refund of all money paid.
